Der heutige Samstagseintopf erinnert die Markgräflerin an die beiden Besuche in Hamburg aus den Jahren 2022 und 2023. Das Rezept für die Steckrübensuppe mit Nordseegarnelen ist ein „Mitbringsel” aus dem Norden.
Von Hamburg hatte ich euch noch noch gar nicht berichtet, das folgt aber in Kürze hier im Blog.
Steckrübensuppe mit Nordsee-Garnelen
Zutaten
• 50 g gereifter Speck
• 400 g Steckrüben
• 200 g Möhren
• 1 Zwiebel
• Butter oder Rapsöl
• 1 Liter Fleischbrühe
• 1 Lorbeerblatt
• 1 Sternanis
• Salz
• Pfeffer
Einlage
• 100 g gepuhlte Garnelen
• Sauerrahm/Schmand und Schnittlauch oder Frühlingszwiebelgrün
Zubreitung
Speck, Steckrüben und Möhren würfeln, die Zwiebel hacken. Alles in einem großen Topf in etwas Butter oder Rapsöl andünsten und mit der Brühe auffüllen. Lorbeerblatt und Sternanis zufügen, salzen und pfeffern. Alles zusammen bei aufgelegtem Deckel etwa 25 Minuten weich garen. Lorbeerblatt und Sternanis entfernen. Mit dem Mixstab pürieren.
Die Suppe in vorgewärmte Suppenteller oder Schalen füllen, mit Nordseekrabben, einem Klecks Schmand und Frühlingszwiebeln anrichten.
Dazu passt Bauernbrot oder Kartoffel-Nuss Brot.
Turnip Soup with North Sea Shrimps
Ingredients
50 g matured bacon
400 g turnips
200 g carrots
1 onion
butter or rapeseed oil
1 litre beef broth
1 bay leaf
1 star anise
salt
pepper
100 g peeled shrimps
Sour cream
and chives or spring onion greens
Preparation
Dice the bacon, turnips and carrots and chop the onion. Sauté everything in a large pot in a little butter or rapeseed oil and top up with the broth. Add bay leaf and star anise, salt and pepper. Cook everything together with the lid on for about 25 minutes until soft. Remove bay leaf and star anise. Puree with a hand blender. Pour the soup into preheated soup plates or bowls, serve with North Sea shrims, a dollop of sour cream and chives / spring onions. Serve with farmer’s bread or potato and nut bread.
